Extra Fruit...



...Make a smoothie!! We had extra strawberries from the Stuffed Chicken with Balsamic Strawberry Glaze featured on the Harris Teeter menu this week.  I found a delicious smoothie recipe on Pinterest and decided to try it out for breakfast this morning. Yum yum!  My husband is allergic to milk so I altered it a bit and made two versions.  Here is the recipe:

Strawberry-Banana Peanut Butter Smoothie 

Dairy Option
1 peeled banana, cut into 1-inch pieces
1/2 cup strawberries, tops removed
1/4 cup plain, low-fat yogurt
1/4 cup skim milk
1 tablespoon peanut or almond butter
1 teaspoon honey
1 cup ice

Dairy-Free Option
Ingredients are all the same except substitute 1/2 cup soy milk for 1/4 cup yogurt and 1/4 cup skim milk.

Preparation: Mix all ingredients in a blender until smooth.
