With school starting, football season kicking off, and Pinterest boards covered in fall food/decor, here's a menu to help you hang on to the last weekend of summer. What better way to celebrate than throwing burgers on the grill?! Since Labor Day falls on Monday, this menu skips over Meatless Monday. However, I've provided a vegetarian choice for anyone who dislikes (gasp!) beef. The menu is four servings - just click on the meal name at it will take you right to the recipe! Pricing is based from Harris Teeter's weekly ad but this menu and shopping list can be used for any grocery store!

Bi-Lo Weekly Menu Aug 26-Sept 1


A few things about this week's menu:
1) Add grilled chicken, lean ground beef, or veggie crumbles to the Corn, Avocado, and Black Bean Tostadas if you want to add a little extra taste. This is a great dish if you have a house divided between vegetarian(s) and meat lover(s).
2) If you don't feel up to making your own Gnudi, you can substitute a package of gnocchi instead. Also, this another easy meal to make vegetarian by leaving out the pancetta. Stir in fresh spinach for more color and taste. This dish is making me ready for fall!
3) I stumbled upon this Outback Steakhouse Alice Springs Chicken recipe and lightened it up a bit. I thought it would be a fun idea for a "date night" or "girls night" by cooking a restaurant favorite at home to save money and calories.

Harris Teeter Weekly Menu Aug 26-Sept 1

The subtotal this week is $48.

A few things about this week's menu:

2) The Cheesy Lasagna Soup with Toasted Baguette would be a great meal to bring to new parents or someone else in need.  It could easily be frozen or reheated at their convenience.

We're in the homestretch...last night we drove to Nick's hometown for his sister's wedding weekend. For those of you who have been counting, yes, this is our third wedding in three weeks! I'm thrilled to be a part of my sister-in-law's special day and we are so excited to welcome her perfect fit, Joe, into the Arnold clan!

Since I'll be busy with wedding festivities all weekend, I've looked at the sale items from all three stores and developed a menu that will hopefully suit them all. Harris Teeter has their 2.5 lb bags of frozen chicken back on sale at B2G3 ($1.67/lb) so go ahead and stock up on those to last you for a while. Don't forget to sort through your own store's ad for special deals you don't want to miss!

If you're feeling adventurous and want to make your own gnocchi there are many recipes on the internet. I think this one would go great with the (not) sun-dried tomato sauce.

I got super excited today when I saw this post from Southern Savers. With the purchase of either (2) Starbucks Coffee or Tazo K-Cups 16 ct. or (3) Starbucks coffee or Tazo K-Cups 10 ct. you can mail in or submit this rebate online to receive a $5 Starbucks gift card. Why I got super excited vs. just excited? This week at Harris Teeter Starbucks Coffee K-Cups 10 ct. are on sale for $7.99 (regularly $10.39). Lowes Foods Weekly Menu Aug 12-18



The subtotal is $60. The Tex-Mex Chicken Soup serves four so you can eat leftovers and take away one other meal to save even more. Also, the Mediterranean Strata should be prepared the night before so be sure to plan ahead.

A side note: a lot of the recipes I've been using lately call for fresh corn kernels. I think straight off the cob is tastier and healthier. You can always substitute canned or frozen if you aren't up to cutting the kernels off OR you can invest in one of these babies that will get the corn off in a zip (pun intended)!
