Sorry for the late post - I just got back into Wilmington after a wedding shower/birthday weekend extravaganza (as my sister called it). As it works out, our new house is a mile away from a Lowes Foods! This week our store is honoring double coupons so any coupon $1.98 or less will be doubled in value. Harris Teeter Weekly Menu July 29 - Aug 4

In the blog world, a big theme is "Meatless Monday." The past couple of weeks I've been trying this out and I think it is something worth continuing. Healthy and frugal - right up my alley! Now that we are in our new house I want to attempt to grow our own herbs. Any tips from you green thumbs out there would be much appreciated! I stumbled upon this short article about the best way to store herbs. This should be helpful in keeping herbs fresh from menu to menu each week because we all know they aren't cheap.


Another tip to following these menus is to read over the recipes before you make them. For example, the beans need to be soaked overnight for the Slow Cooker Black Beans. Knowing the prep time for meals can help you plan and also save you from an "uh oh" moment when you are starving and now realize your recipe takes 8 hours to cook (speaking from experience here!).

The subtotal this week is $54. The Pork Tenderloin with Sweet Corn Relish and Baked Sweet Potatoes recipe is for 4 servings so invite a couple of friends over and impress them with your cooking skills! Or, save leftovers for another dinner and the subtotal this week will be under $50.

No Bi-Lo or Lowes Foods Menus This Week


I dropped the ball this week on Lowes Foods and Bi-Lo menus. I started out so ambitious thinking I could move our whole house, unpack it, and post two more menus all by the end of yesterday evening. Boy did I get a reality check! Our house is maybe 1/4 of the way unpacked and that's only due to the help of some amazing friends and my awesome parents. I just pulled my laptop out of a box this morning to get to work. So, unfortunately there won't be any Bi-Lo or Lowes Foods menus this week. I promise to do my best and post all three menus next week. Life is just a little insane right now. Thanks for hanging in there and I hope this Harris Teeter menu will help you do a little planning and shopping in the meantime.

I'm back!! Sorry for the long hiatus but with going to Kiawah Island, San Francisco/Napa Valley and buying a house, things have been a little hectic - but oh so exciting!! Also, Coupon Kitchen turned one year old while I was gone! You can celebrate with me by entering the giveaway.

Vacation Round #2


My life is crazy right now. I haven't even been back one week from Kiawah Island and this morning I'm wheels up for my bestie's bachelorette weekend in San Francisco and Napa Valley. I'm not complaining though! However, my crazy schedule does make it hard for me to do the weekly menus so unfortunately this week there will not be any. I should also give you a heads up that this busy schedule isn't slowing down anytime soon. Over the next month and a half I'll try my best to post as many menus as I can. However, since I'm traveling every weekend until September and moving into a new house next weekend, I wanted to be fair and give you a little warning that things might be a little out of sorts around here.

Below are a few resources and some of my favorite recipe sites to help you develop your own menu if needed. Also, browse through old menus for any of your favorite recipes I've posted. Skimming through the Harris Teeter ad (I can't help myself, even if I'm going out of town!) there seems to be a lot on sale. Weekly Menu July 8-14


This week I'm in Kiawah Island with my husband's family. This is an annual trip they have been making for over 15 years and since this is my fifth year going, I now consider myself a veteran. Kiawah Island is a one of the most gorgeous places in the world, let alone the U.S. That's right, it is in this country and just south of Charleston, SC. I had never heard of it and definitely thought it was somewhere tropical when Nick first mentioned it! Not only is Kiawah a vacation I look forward to every year, but it is where my husband asked me to marry him three years ago. I love going to the island but now every year we make the trip it has a special meaning. Nick and I make sure to visit Bass Pond and walk out onto the pier where he got down on one knee in front of an audience of alligators and made me the happiest woman in the world!

My mother-in-law was hiding in the bushes to take pictures!

Since I'm on vacation, I haven't had time to put together menus this week. However, below is a menu of a few of my favorite recipes that should be easy and affordable without considering what's on sale.
