Lowes Foods Weekly Men Jan 27-Feb 2

It's Super Doubles this week at Lowes Foods and they are now doubling coupons $2 or less! Check out this list from Port City Foodies (along with a money maker) or a longer list at Southern Savers.

My friend and Coupon Kitchen follower, Jeff, stumbled upon this recipe and asked if I could work it somehow into a weekly menu. With pork tenderloin on sale I attempted a lighter version of the recipe. I think the beer will add a yummy taste but you can always leave it out for a non-alcoholic version. Perhaps not the healthiest dinner but I'm always up for the occasional indulgence!

The subtotal this week is $49.

Bruschetta Recipe & Giveaway

Food Lion is launching an exclusive line of four oils from Greece, Italy, Spain, and California. Each Taste of Inspirations oil has its own unique flavor: the Greek offers a fresh taste and peppery finish, the Italian has an almond aroma, the Spanish has a mild spicy flavor, and the California provides a fruity zest.

I decided to take the Italian olive oil and make one of my favorite fresh and easy recipes - bruschetta.  It's a simple dish that can be a great appetizer, party favorite, or a quick lunch (just what we did on Saturday). It's important to have quality olive oil when making bruschetta and the Taste of Inspirations Italian oil was the perfect fit.

Food Lion wants a lucky Coupon Kitchen reader to try all four of their new oils as well! Leave a comment below with which oil you are most excited to try. Make sure to leave an email address so I can contact you if you're the winner. This giveaway will end on January 22 at 5:00 pm and is only open to Wilmington, NC residents. Good luck!

Bruschetta
Servings: 8

Ingredients
1 pint grape tomatoes, quartered (or diced, depending on preference)
1/4 cup fresh basil, chopped
1/4 cup diced onion
1 tsp minced garlic
1-2 Tbsp olive oil
1 tsp red wine vinegar
1/2 tsp black pepper
1/2 tsp salt
1 baguette, sliced

Preparation
1) Add tomatoes, basil, onion, and garlic to a medium bowl. Stir to combine.
2) Season tomato mixture with olive oil, vinegar, pepper, and salt. Stir and serve on top of toasted baguette.
