Another tip to following these menus is to read over the recipes before you make them. For example, the beans need to be soaked overnight for the Slow Cooker Black Beans. Knowing the prep time for meals can help you plan and also save you from an "uh oh" moment when you are starving and now realize your recipe takes 8 hours to cook (speaking from experience here!).
The subtotal this week is $54. The Pork Tenderloin with Sweet Corn Relish and Baked Sweet Potatoes recipe is for 4 servings so invite a couple of friends over and impress them with your cooking skills! Or, save leftovers for another dinner and the subtotal this week will be under $50.

Just stopping by from Organizing Junkie's Menu Plan Monday!
I try to serve meatless meals, breakfast and/or lunch daily. You're right, it's very economic.
It looks like it's going to be in the low 100's but humid in Las Vegas today.
Your menu plan looks delicious!
I hope you have a terrific week
Hi Alison,
Your Grilled Pork Tenderloin and your menu for the week look awesome! Thanks for sharing and have a great week.
