Harris Teeter Weekly Menu Feb 19-25

Cooking Tip: When recipes call for shredded or cooked chicken (like the Greek Chicken and Pita Casserole below) I cook the chicken breast in a slow cooker for 6 hours on low. When it comes time to make the meal for dinner, the chicken is all ready! If there are a few recipes that week that call for cooked chicken, I will put the amount needed for the week in the slow cooker and then store the chicken in an air-tight container in the fridge. This is a great time saving method and it is cheaper than buying a rotisserie chicken.  The weekly subtotal is $48.50 and includes a ton of fresh vegetables and meat.

Another cheap way to do shredded chicken is to buy a whole chicken and put it in the crockpot. It's cheaper per pound and you can get a few meals out of it.

Very true!! I'm not a fan of dealing with bones, etc so I always use the chicken breasts. It would save more money to get over that, haha. Thanks for sharing!
