A few things about this week's menu:
1) Add grilled chicken, lean ground beef, or veggie crumbles to the Corn, Avocado, and Black Bean Tostadas if you want to add a little extra taste. This is a great dish if you have a house divided between vegetarian(s) and meat lover(s).
2) The Cheesy Lasagna Soup with Toasted Baguette would be a great meal to bring to new parents or someone else in need. It could easily be frozen or reheated at their convenience.
3) If you don't feel up to making your own Gnudi, you can substitute a package of gnocchi instead. Also, this is another easy meal to make vegetarian by leaving out the pancetta. Stir in fresh spinach for more color and taste. This dish is making me ready for fall!
4) I stumbled upon this Outback Steakhouse Alice Springs Chicken recipe and lightened it up a bit. I thought it would be a fun idea for a "date night" or "girls night" by cooking a restaurant favorite at home to save money and calories.
