Harris Teeter Weekly Menu Oct 28-Nov 3

If you're not a fan of fall squash you are going to hate this week's menu so I'll go ahead and apologize now! With fall squash on sale at $.79/lb and so many delicious recipes out there, it is just too hard to resist incorporating them into almost every dish this week. I think this calls for a Happy Fall, Y'all!

A few tips:
1) Dice a whole butternut squash at one time and keep the leftovers in a sealed container in the refrigerator for up to two days.
2) An easy (or should I say easier) way to cut butternut squash: Cut off both ends of the butternut squash. Lay one end flat on a cutting board and use a vegetable peeler to take skin off down the sides of squash. Cut the squash lengthwise and then slice into smaller sections. Harris Teeter does sell butternut squash already diced but it is more expensive.
3) The Tex-Mex Spaghetti Squash Boats and Spaghetti Squash Pie can both be made with a meat substitute or with vegetables only.

The subtotal this week is $34!! This doesn't include the Halloween Menu but with $16 to spare you should still be under this week.
