Bruschetta Recipe & Giveaway


Food Lion is launching an exclusive line of four oils from Greece, Italy, Spain, and California. Each Taste of Inspirations oil has its own unique flavor: the Greek offers a fresh taste and peppery finish, the Italian has an almond aroma, the Spanish has a mild spicy flavor, and the California provides a fruity zest.

I decided to take the Italian olive oil and make one of my favorite fresh and easy recipes - bruschetta.  It's a simple dish that can be a great appetizer, party favorite, or a quick lunch (just what we did on Saturday). It's important to have quality olive oil when making bruschetta and the Taste of Inspirations Italian oil was the perfect fit.

Bruschetta 
Servings: 8

Ingredients
1 pint grape tomatoes, quartered (or diced, depending on preference)
1/4 cup fresh basil, chopped
1/4 cup diced onion
1 tsp minced garlic
1-2 Tbsp olive oil
1 tsp red wine vinegar
1/2 tsp black pepper
1/2 tsp salt
1 baguette, sliced

Preparation
1) Add tomatoes, basil, onion, and garlic to a medium bowl. Stir to combine.
2) Season tomato mixture with olive oil, vinegar, pepper, and salt. Stir and serve on top of toasted baguette.
